- Marinate the beef the taco seasoning in a little oil. Set aside for at least 30 mins
- In a pan, heat some oil to a medium to hot heat.
- Fry the beef in the oil until it’s golden brown on all sides. 6-7 mins will create a medium to a medium rare finish.
- Set the beef aside in a plate so the juices can be collected.
- In the remaining oil in the same pan, fry the onions, garlic, corn and season with a little salt. Fry for 2 mins.
- Then add the beef and the juices and warm through for another minute.
- Garnish with coriander and serve with rice
