• Ingredients:

    • 1 bag frozen cauliflower rice
    • 1 kg beef mince
    • 1 tbl tuscan seasoning
    • 1 tbl mexican seasoning
    • 1 onion
    • 1 tbl salt
    • 1 tsp pepper
    • 1 cup veg oil
    • 1 cup beef stock
    • 1 tbl Lemon zest
    • 1/2 cup fresh mint
  • Directions:

    1. Put the mince into a bowl.
    2. Put in the tuscan and mexican seasoning along with salt into the bowl.
    3. Mix well. Make about 5 meatballs per person.
    4. Slice onions and set aside.
    5. Pour oil into a pan on a high heat.
    6. Place the balls in and turn it down to medium heat. Turn the balls. until they are browned all over. That will mean the inside is just pink.
    7. Remove the balls and set aside.
    8.  In the remaining oil, fry the onions until golden brown. Best to start at as high heat and then lower it medium as the onions take colour.
    9. Put in the cauliflower rice mix and combine well.
    10. Pour in the stock and reduce on a high heat till the cauli thickens.
    11. Place the cooked beef balls back in the pan, onto the cauli and cook for another 2 mins.
    12. Then take it out.
    13. Garnish with lemon zest and fresh mint and serve!
