COCONUT PRAWN CURRY

 

  • Ingredients: (4 PEOPLE)

    600g cooked Prawns 2 onions (chopped up)

    2 thumbs of grated ginger

    2 tbl minced garlic

    2 tbl curry powder

    2 cans of tomatoes

    1 can Coconut Cream

    2 Cups Frozen Vegetables

    1 cup coriander

    1 tbl chilli flakes handful chopped coriander ¼ cup oil

  • Directions:

    - Heat the oil over a medium heat.

    - Fry the onions and garlic and ginger for 7 mins.

    - Add the curry powder and cook for 2 mins

    - Add the tomatoes and the coconut cream. Mix well.

    - Add the chilli flakes and salt. Mix well. Taste to make sure you are happy with the seasoning.

    - Let the curry boil.

    - Then add the frozen veg and let it simmer for 7 mins.

    - Add the cooked prawns and warm them through for 2 mins.

    - Garnish with coriander and serve with cooked rice
