• Ingredients:

    4 PEOPLE


    2 onions sliced

    1 capsicum diced

    4 cloves of chopped garlic

    1 tsp cumin

    1 tsp chilli

    1 tsp coriander

    2 cans chickpeas (drained)

    2 cups chopped kale

    2 cans of chopped tomatoes

    8 eggs

    2 cups coriander

    Salt and Pepper Oil

  • Directions:

    1. Heat some oil over a medium heat

    2. Add the onions and capsicum and fry till translucent

    3. Add the garlic and spices and cook for 1 min

    4. Pour the tomatoes in and cook for 1 min.

    5. Season with salt and pepper and simmer

    6. Add the chickpeas and cook for a min

    7. Make two wells and break the eggs into it. Put the lid on and cook the eggs or done to the way you like it.

    8. Garnish with coriander and serve
