IMMIGRANT INDIAN CHICKEN TACOS

 

  • Ingredients:

    8 chicken drumsticks (frozen)

    1/2 tsp numeric powder

    1/2 tsp chilli powder

    1 onion

    1 head of cauliflower

    1 tbl crushed garlic

    8 tacos salt & pepper

    1 cup oil

    1/2 cup water

    1 cup yoghurt

    1 lemon

    1 sprig of spring onions
     

  • Directions:

    - Strip the meat of the drumsticks. * drumsticks delivers enough meat for one taco

    - Marinade the meat in the garlic, yoghurt and 1 tsp salt. Set aside for 15 mins

    - Cut the cauliflower into florets and set aside

    - Chop the onions and fry them over a medium heat till golden brown

    - Mix in the spices and 1/2 cup of water. Fry till most of the water is evaporated. Set aside

    - Cook the chicken in 1 til of oil over a medium heat. Make sure the chicken is cooked through

    - Warm your tacos in a pan.

    - Start each taco with some yoghurt as the base. Then cauli and then chicken

    - Garnish with some lemon and spring onions

    - Roll up and Enjoy!
