1. Mix the ginger, garlic and lemongrass into the chicken. Mix well and leave to marinade to 30 mins
2. Heat some oil over a medium heat.
3. Cook the chicken for 5-8 mins, until cooked
4. Mix the soy and honey into a dressing
5. Lay cooked noodles on the bottom of the tray. Then add the lettuce, carrot and cucumber
6. Lay the chicken on top
7. Smother the top with sauce. Garnish with lemon/lime juice, chopped mint and chopped chilli. 8. Serve!
