MOROCCAN BEEF SCHNITZEL

  • Ingredients:

    • 4 large beef schnitzel
    • pieces
    • 2 cups breadcrumbs
    • 4 eggs
    • 4 cups of peeled & chopped kumara
    • 4 tsp Moroccan seasoning
    • 4 tbl sesame oil
    • 2 lemons salt & pepper
    • 1 cup oil
    • 1 cup plain Yoghurt
    • Fresh Mint leaves
  • Directions:

    1.  Peel and chop the kumara into thumb sized pieces.
    2.  Par boil the kumara till it’s half cooked. Set aside.
    3.  Heat 1 tbl of oil in pan until a medium heat.
    4.  Fry the Kumara with the spices, salt and pepper . Keep turning till they go brown. Then set aside.
    5.  Heat 1 tbl of oil in pan until a medium heat. Use 1 tbl for every piece of beef.
    6.  Dip each piece of beef in the egg and then into the breadcrumbs, then into the oil.
    7.  Cook one piece in the pan at a time for about 3 mins per side. Turn once, making sure both sides are golden brown.
    8.  Mix 1 tsp of Moroccan seasoning into the yoghurt and garnish with fresh mint
    9.  Serve with a squeeze of fresh lemon over the beef.
