PRAWN CAKES

  • Ingredients:

    • 8 cups potato mash
    • 3 eggs.
    • (1 to make the pa3es)
    • 2 eggs to crumb the pa3es
    • 200g peeled cooked prawns
    • ½ cup chopped curly parsley
    • 1 cup Mayonnaise
    • 1 cup Breadcrumbs
    • 1 cup flour
    • 1 cup chopped gherkins
    • 2 Lemons
    • 1 cup Oil
  • Directions:

    1. Beat an egg and set aside.
    2. Mix it in with the mashed potato with the prawn meat, parsley, mayonnaise. Season with salt and pepper. Make 16 pa3es and set aside.
    3. Put the Pa3es in the freezer for 30 mins so they set well.
    4. Set out the flour in a plate. Beat the other two eggs and set in a bowl. Set the crumbs out in a plate 5. Heat the oil in a pan Oll medium heat
    5. Dip each paQy in flour then eggs then crumbs.
    6. Cook four cakes at a Ome. 2-3 mins per side unOl golden brown. Drain each batch on paper towels and set aside.
    7. Combine the mayonnaise, gherkins and lemon juice.
    8. Serve the cakes with the mayo and enjoy!
