SPICEY MEXICAN EGGS

 

  • Ingredients: (4 PEOPLE)

    2 onions (chopped up)

    8 cloves garlic (chopped up)

    ½ tsp cumin

    ¼ pinch chilli

    4 small cans of beaked beans

    1 can of tomatoes

    2 cups grated Colby cheese

    1 cup chopped coriander

    8 Eggs

  • Directions:

    1. Heat oil in a pan over a medium heat

    2. Fry the onions, garlic, tomatoes, beans and spices. Season well. Cook for 2 mins

    3. Add the eggs, cheese, chilli and season with salt to taste.

    4. Let the whites cook and put the lid on. Cook for 2 mins

    5. Garnish with coriander and serve
