• Ingredients:

    • 8 eggs
    • Garlic
    • Cooked Pasta (4 cups)
    • Chilli flakes
    • Lemon juice
    • 2 bunches asparagus
    • 2 tbl Tuscan seasoning
  • Directions:

    1. Cut the stems off the asparagus. Then cut each one into 1.5 inch pieces and set aside

    2. Heat some oil over medium heat.

    3. Cook the eggs till the white is cooked. But keep the yolks soft. Season with salt and pepper 4. Heat some oil over medium heat.

    5. Cook the asparagus with garlic, chilli, herbs, salt and pepper. Cook on high for 3 mins, remove and set aside.

    6. Add pasta and lemon and mix well. Season if needed. 7. Put the eggs over the top and serve.
